Fumonisins are naturally-occurring mycotoxins produced by Fungi of the genus Fusarium. They are typically found in much higher concentrations than other mycotoxins, such as the aflatoxins. They are commonly found in agricultural food products but are considered both a human and animal health hazard due to their cytotoxicity and immunosuppressive properties. Therefore, exposure through food, such as cereals, should be kept as low as possible.
